The name FA.LU. CIOLI has always been synonymous with quality and authenticity in the preparation of the porchetta. The company now managed by Luca Cioli, was founded in 1917 by his grandfather Ovidio Cioli who, at the age of 17, had the intuition to buy a pig, bone it, season it with natural aromas, such as salt, pepper, garlic and rosemary, and then sew it up and cook it at high temperatures. From his brilliant intuition came the current "Porchetta di Ariccia".For about 100 years for four generations, Cioli family has passed down, from father to son, all the secrets of the production of this delicious gastronomic product, pride of Ariccia. Currently, the production is carried out in the large factory located in Ariccia, in the province of Rome. To obtain the PGI must comply with the strict production rules set out in the product specification, and compliance with these rules is guaranteed by a specific INSPECTION BODY.
